I have to bake with gluten free flours but have perfected my recipe over the years. I love baking quick breads, muffins and cookies, all gluten free! My newest attempt was to try my hand at dehydrating banana chips... in the oven. Found a YouTube video that did it so I followed along. Was kind of time consumming so don't know if I'll do it again, but from 5 bananas I came out with a smallish bowl of crisp banana chips. I did eat them all, liked them, but they did did totally dry out and become crispy. I don't know how long they would have "kept" as I just stored them in a plastic tub in my cupboard, but they got eaten before I had to find that out! But probably won't do it again! Took a good 24 hours for them to dry totally after they came out of the oven. I also made some gluten free/buckwheat waffles that I haven't done for YEARS and YEARS! Were pretty good but a little too solid for me and hubby! Have fun baking!
