It's Finally Fall Y'all Lunch


Remember how I was belly aching about missing fall yesterday?
Well I need to be careful what I wish for because fall is here in
Victoria, Texas.  It's cool and cloudy.  Makes one long for hot
spiced cider and some warm soup.

And I love it!





So in between the raindrops, Mom and I will catch a few lovely
fall moments out in the backyard.



The warm reds and oranges, golds and brown just cozy me up!



And there is nothing quite so tasty as a hot cup of soup on a 
cool and rainy fall day.  I made this batch of carrot and ginger soup.
It's my Mom's very favorite and she does not have to share.
The recipe follows.


Carrot and Ginger Soup

EVOO
1/2 large onion, diced
1 clove of garlic, minced
1 small piece of ginger, grated
(use your microplane)
salt and pepper to taste
4 large carrots peeled and sliced
2 cans chicken broth
(or your own fresh if you have it)
splash of half and half


Add 1 Tablespoon EVOO to a soup pan.  Saute
the diced onion until translucent.  Add salt now
to sweat out the onions.  Next add the garlic
and saute briefly being careful not to brown.  Add
the grated ginger and the carrots.  Cook for a couple
of minutes stirring often.  Add the chicken broth.  Bring
to a boil and then cover and simmer for at least 30 minutes.
Let the mixture cool before adding to your blender
to puree.  You don't want the hot mixture flying
all over your kitchen :-)

Just before serving add a splash of half and half.

I absolutley love this post of yours...there's a complex simplicity to that is precious. I think perhpas the blue and white, in contrast with the fall colors makes it just so.   8. Susan, you finally got some fall weather, I see and what a way to celebrate with such a lovely autumnal table, set with steaming seasonal soup and an array of appetizing accessories! Guess what? I don't have to ''fake'' fall anymore, either!! As I write, we are experiencing 30 km winds which have created a stormy air current above the island! Yes, we'd better be careful what we wish for, indeed!

  12. What a beautiful table setting! I love the fall colors. We're finally getting some fall-like weather too, thank goodness! My little Holly cat is pawing at a lizard through the window right now. Dogs and cats sure do love lizards, don't they? :)
