And That's What's for Dinner


Another scorcher today.  Yesterday it got up to 108 degrees.  Wowsa!!
Normally I love to cook, but when the temps get this high I don't have the
same interest.  I can't serve salads every night because hubby gets tired
of them.  We could go out for dinner, but I don't want to go out for
dinner every night.



What to do?




Looking through cookbooks ~ hoping for some inspiration.



Still looking ... wait ~ I know what I'll serve.  

Tuna Patties
Oven Fried Sweet Potatoes
Broccoli 
and Chilled Pineapple Chunks


Tuna Patties for Two Recipe 
(I eyeball ingredients and seldom measure so bear with me)

1 can of tuna drained
1 chopped green onion
1/2 stalk celery diced
1/4 to 1/2 red bell pepper diced
1 beaten egg
1 tsp grated lemon rind
bread crumbs (I like Bookbinder's for fish)

Combine first six ingredients and form into two generous patties.
Dredge in bread crumbs.  Brown in medium skillet lightly coated with
EVOO.  Flip to brown both sides.

Then I make a sauce for the patties consisting of 1/4 cup mayonnaise and 1 tsp
of Dijon mustard.  Put a dollop of sauce on each patty.  

Canned tuna is the ONLY kind of fish David will eat.  He always likes a 
cold tuna salad, but I like to shake things up a bit.




Let's see.  I could make some dessert like an apple crisp.



No ~ let's not get too carried away in this heat.
Ice cream at Fanci Freeze would be better.

  1. You are funny...forget the dessert in this heat! Actually, we got down to the low 80's, thankfully. Great recipes, I haven't had tuna patties in a long time!

  4. OMG 108! Thats horrible! I hope you have relief soon! We had lobster rolls for dinner, still trying to figure out dessert! Your tuna burgers sound delicious, but Ron won't eat tuna . . . MEN!!!

  6. it all sounds wonderfuly yummy. Our days are so beautiful high 70s to low 80s and dry. I have a light quilt over me everynight with the window open my favorite weather.

  8. Susan ~ I feel your pain with the heat. We have been barbecuing to keep the heat out of the house.... and eating out. It's hard to try and be a creative cook in this heat wave ~ stay cool my friend. Bentley ~ you need an ice cream cone...
